Muffins, Outfits, and The Wait.

Someone recently said “I feel like I’m waiting for something that isn’t going to happen.” Sheesh. You and me both, sister. It’s hard to believe that in 4 more days (if not sooner), we will have another person in our family.

In all of my free time, I managed to overestimate my Walmart grocery pick-up and got way too many bananas! I’m getting pretty good at this waiting game, so I patiently bided my time for them to “go bad” so I could make some muffins. I am always on the lookout for a good, unsweetened, healthier breakfast option – but my experiments in the past have not gone so well. I decided to really pay attention to my process this time instead of just throwing everything together in a bowl, and I’ll be dern if these guys aren’t delicious.

*I tried to focus on a few key ingredients that may be helpful for nursing in the upcoming weeks, and success! I don’t know that I feel qualified to call them “lactation boosters”, but the ingredients I used can’t hurt.

Banana Nut Oat Muffins

  • In a “wet ingredients” bowl, mash 3 large, really ripe bananas.
  • Add two eggs, 1/3 cup coconut oil, and 1 tsp. vanilla extract.
  • In a separate “dry ingredients” bowl, combine: 1 cup whole grain oats, 1/2 cup shredded coconut, 2 tbs. flax seed, 1 tsp. ground cinnamon, and 1/2 tsp. baking powder.
  • Mix wet ingredients into dry ingredients.
  • Stir in 1 cup chopped walnuts.    
  • Prepare muffin tin (I did use regular butter to grease my tin).
  • Bake at 350 degrees for about 25 minutes.

In other news, I have nested just about everything in my house until I can’t even stand myself. I most recently reorganized my closet, and I am getting SO excited about wearing my normal clothes. I picked up some great things last summer that are just begging for me, and I’ve recently been on the lookout for summer 2017. Belk was having an awesome clearance this past week, and I am unashamed to say that I racked up on summer shoes. (Okay, maybe I’m a little ashamed because I’m only going to show you three of the pair I bought… There are “several” more…)

I have recently started looking at clothes again in the thrift store… mostly sweaters and longer “wrappy” things I can wear post-partum while the weather is still cool. But I ran across a summery Diane Von Furstenberg print top yesterday that I couldn’t leave behind. I’m not sure if it will end up in my closet or my mom’s, but either way it was a great find for someone!

My mind keeps coming back to this red vintage dress I thrifted last summer. I didn’t get a chance to wear it before my bump took over, and I absolutely cannot wait to pull this out. Those shoulders = what dreams are made of. fullsizerender
