Some of the recipes I post are healthy, and let’s just be clear that this is not one of those. This is “It’s 5:51pm, my children still need baths and food, my lawn-mowing husband is going to be inside in 20 minutes, I spent an hour talking to the neighbors when I could have been fixing supper and now there’s nothing on the table” dinner. This recipe won’t require much change in your shopping list, you probably have all but one of the ingredients in your pantry already, it’s filling, it’s fast, and it’s good.
If I’m being honest, these Chicken Taquitos may be at least a part of the glue that holds my husband’s idea together that I am a capable cook, wife, and mother. When all else fails, make these. The ingredients listed here are not hard and fast, which is the beauty of this recipe. It is so forgiving.
- 4-6 soft flour tortillas
- 1 can shredded chicken breast (I know… it sounds gross… hang with me.)
- 1/2 pack softened cream cheese
- 1 cup shredded cheddar cheese, divided
- 1/2 tbs. cumin
- 1 tsp. onion powder
- Salt and pepper to taste
- Preheat oven to 375.
- Mix drained chicken, cream cheese, half of cheddar cheese, and seasonings together in a bowl.
- Prepare a glass baking dish.
- Spoon chicken mixture into tortillas (long-ways), roll tortillas, and place “roll-down” in the baking dish.
- Spread remainder of shredded cheddar on top of tortillas.
- Bake for ~25 minutes or until heated through, cheese melted, and tortilla ends crispy.
- Serve with salsa.
Remember what I said about these ingredients? Forgiving. So forgiving that last night I replaced the cream cheese with sour cream, added a few tbs. of salsa with seasonings into the chicken mixture, and baked at 400 for about 18 minutes because I was in such a rush. And you know what? No one was any the wiser. It is not brilliant or sexy or health-food. But it gets people fed when you have no time and for some ungodly reason no one delivers pizza to your neighborhood.
If you don’t have no-dinner-at-5:51 nights, congratulations. You are a unicorn and I would like to
punch you in the nose, switch your coffee out for decaf, shake your hand. If you’re like the rest of us non-unicorns, buy a can of shredded chicken, store it for a rainy day, and thank me later.
